Louise’s Pasta

If you are currently trying to think of a famous chef named Louise, and can’t come up with one, (I dunno. Maybe there is one and I just don’t know.) give it up. Louise made this pasta for dinner when we visited her family about 20 years ago. I asked for the recipe, and I still make it – and it always makes me think of the fun times our families had together.
Louise’s Pasta
4 slices of bacon, cut into bite sized pieces
1 whole chicken breast cut into bite sized pieces
1 t each Rosemary and thyme
Salt and pepper to taste
1 small onion, chopped
½ each red and green pepper, chopped
6 mushrooms, sliced
1 Tablespoon flour
1 ½ Tablespoon paprika
12 oz cream
Pasta (enough for 4 people)
In large pan, fry bacon until it starts to brown. Add chicken and cook until bacon is crispy and chicken begins to brown. Season with salt, pepper, rosemary and thyme.
While the chicken is cooking, start cooking the pasta.
Add onion, mushrooms and peppers, and continue cooking until vegetables soften. Sprinkle on the flour, mix into the chicken and vegetable mixture, and cook for 2 or 3 minutes.
Add the cream and paprika. Add additional cream and paprika to result in a creamy, orange-coloured sauce.
Add the cooked pasta to the sauce. Serve with grated parmesan cheese.
