Pancake Mix

I’ve been meaning to make pancake mix for quite some time now, but I found a mix in the grocery store that we liked well enough, and that didn’t stray too far from our standards, so we started buying it. And just kept buying it, until I got fed up with the cost of it. Nearly $9 for a small package. I haven’t calculated the cost of this mix, but it’s nowhere near $9, has no weird ingredients and makes several times more than the small package we had been buying.

I used all whole wheat flour, and it worked well, but if you prefer, you can use part whole wheat, part all purpose/plain flour.
Whole Wheat Pancake Mix
4 cups Whole Wheat flour
1/4 cup sugar
1 1/4 tablespoon baking powder
2 teaspoons baking soda
2 teaspoons salt
Mix well and store in an airtight container
To use: mix 1 cup of pancake mix with one egg, 1 cup milk and 2 tablespoons melted butter.
Cook and serve as usual.
